Grilled sardines with pastis

Serves 6


  • 1.5 kg of large sardines
  • 1 untreated lemon
  • 3 garlic cloves
  • 3 Tbs of Pastis
  • 4 Tbs of olive oil
  • Salt and pepper


  1. Gut, rinse and wipe the sardines. Put them aside in a dish. Sprinkle with grated lemon zest and finely chopped garlic. Drizzle with lemon juice, Pastis and olive oil. Leave to marinate for 30 minutes, turning sardines twice to let the flavours soak in.
  2. Drain the sardines then place them on a double grill. Grill 4 minutes each side, adding the marinade twice during the cooking. Add salt and pepper to taste and serve hot.
